Happy Valentine's Day!

It's a day early, but I won't be able to be blog tomorrow, so I thought I'd take this opportunity to wish everyone a Very Happy Valentine's Day.

For Valentine's, the kids wanted to make sugar cookies with icing, but the thought of doing all that work just tired me out. (Ever had that feeling?) So, we 'made-do' with this instead. Not that anyone in this household complained, mind you, these cookies won't last til Valentine's.




I leave you with one of my favorite chocolate chip cookies recipe.
You chill the dough in the refrigerator for about 30 mins, in order to roll out easily.
That way you can use your cookie cutters and go nuts.

Chocolate Chip Cookies

1) Beat on medium until very fluffy:
  • 1/2 cup (1 stick) of unsalted butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar

2)Add, and beat until combined
  • 1 large egg
  • 1/4 tsp salt
  • 1 1/2 tsp vanilla extract
3)Stir in until well-blended
  • 1 cup and 2 Tbs of all-purpose flour
  • 1/2 tsp baking soda
4)Stir in
  • 1 cup chocolate chips
5)Drop teaspoonfuls (or cookie shapes) onto a greased or lined baking sheet. They should be about 1-2 inches apart
6)Bake 375 degrees Fahrenheit f0r 8-10 mins.
7)Transfer cookies to racks to cool.
