
When it comes to legumes, Chickpeas (Garbanzo Beans) are by far, my favourite.
High in protein, zinc and folate, chickpeas are also a great source of dietary fiber and thus, healthy carbohydrate.
I wish I could incorporate it into my meals, but my family will probably riot, if I were to serve it up for dinner. I know there are ways to sneak chickpeas into food. Someone even served me chickpea chocolate chip cookies. It was so delicious and moist that if she had not told me I would never have known that there were chickpeas in it.
I did find that my kids will eat roasted chickpeas. Yes, I get the occasional, "But MOM! I don't like chickpeas". I leave them lying around in a bowl during snack time, and they mysteriously disappear.
Note: If you have a peanut allergy, you may want to avoid chickpeas, unless you know that you can tolerate them
Roasted Chickpeas
1 can of chickpeas, wash, drain and pat dry
Preheat oven to 450F
Spread chickpeas out on a baking sheet.
Roast for 30-40 mins, shaking the sheet occasionally to turn the chickpeas.
Cool, and store in an air tight container.

We eat them this way at our house, but if you like, you can season them just before you eat them (otherwise they get mushy when stored), with a drizzle of olive oil and some garlic salt. If you are adventurous, you can spice it up with a little chilli powder.

yummm. My favorite bean! I made them once, but they tasted yucky after they cooled off. That scoodie is sooooo cute! (and the kids modeling them too!) I'm goign to try that...
my fav is to chick peas and angil hair pasta. this sothern mama made it for me. my family won't eat it either. it has chick peas little butter. salt. and angle hair pasta. try it you'll gaga over it. ps thanks for the great ideas you post. I come here reg. JD
