Apple Banana Mini Muffins

I toss my very ripe bananas into the freezer, if no one is going to eat them, because when defrosted, they make great banana bread or muffins. Usually I have 3 or 4 sitting in the freezer waiting for me. One day, I found One Banana. One banana is measly-peasly.

So, I came up with this apple banana muffin recipe and it has now become our favorite mini muffin recipe.

Apple Banana Mini Muffins


Wet Ingredients
1 mashed banana
1 chopped up apple
1 beaten egg
1/4 cup melted butter
1/4 cup milk
1/2 cup white sugar (yes, this is considered wet. I reduced this from 3/4 cup. We don't eat very sweet muffins in our house, but if you do, you may want to increase the sugar)

Dry Ingredients
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 and 1/2 cups of flour

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease muffin tins or line muffin tins with muffin cups.
  3. Mix the wet ingredients in one bowl
  4. Mix the dry ingredients in another bowl.
  5. Put the dry ingredients into the wet ingredients, and stir until it just comes together. Do not over stir, it's OK if the mixture is lumpy.
  6. Pour into muffin tins
  7. Bake for about 20 mins if using regular muffin tins, bake for about 15 minutes if using mini-muffin tins. Muffins should be slightly golden brown on the tops.
Tip1: If you have kids and haven't tried baking mini-muffins, you certainly must try it. It's is the perfect size for the little ones.
Tip2: These muffins are great for freezing. I usually pop about 1/2 in the freezer to keep fresh. Bring them out and microwave to defrost.... perfect.

Can you please explain what "1 and 1/1 cups of flour" means? I'm assuming it is a typo... Thanks!
