So, I came up with this apple banana muffin recipe and it has now become our favorite mini muffin recipe.

Apple Banana Mini Muffins
Wet Ingredients
1 mashed banana
1 chopped up apple
1 beaten egg
1/4 cup melted butter
1/4 cup milk
1/2 cup white sugar (yes, this is considered wet. I reduced this from 3/4 cup. We don't eat very sweet muffins in our house, but if you do, you may want to increase the sugar)
Dry Ingredients
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 and 1/2 cups of flour
- Preheat oven to 350 degrees Fahrenheit.
- Grease muffin tins or line muffin tins with muffin cups.
- Mix the wet ingredients in one bowl
- Mix the dry ingredients in another bowl.
- Put the dry ingredients into the wet ingredients, and stir until it just comes together. Do not over stir, it's OK if the mixture is lumpy.
- Pour into muffin tins
- Bake for about 20 mins if using regular muffin tins, bake for about 15 minutes if using mini-muffin tins. Muffins should be slightly golden brown on the tops.
Tip2: These muffins are great for freezing. I usually pop about 1/2 in the freezer to keep fresh. Bring them out and microwave to defrost.... perfect.
